Introduction – a welcome toast and a compliment from the chef;
Prelude – arancini with smoked catfish;
"Solo" flavor – venison carpaccio with pear, blue cheese, arugula, nuts and truffle oil;
Basic chords for your choice:
Porto beef rib with mashed potatoes and caramelized vegetables;
or
Trout with mini potatoes, smidges, pomegranates and oranges;
The final note is lemon tartlet with meringue.
